These handmade wooden sauerkraut pounders are made just for us by John Fry, a local wood craftsman who has his workshop here in Nelson. We've worked with John for over ten years now. He cuts no corners and is always thinking of a better version!
A pounder, stomper or tamper, is an essential part of making fermented cabbage-based pickles like sauerkraut.
Good kraut needs a lot of brine made from the juice of the cabbage and the only way to get that juice to flow is to pound it with a blunt wooden tool like this one.
These pounders are also really useful to pack your jars and press your pickles down when they are getting underway.
Our pounders are made from a variety of hard un-treated timbers that are sturdy enough to take the strain. They are light and tapered to fit in your hand comfortably.
