Saffron is easy to grow in NZ gardens. It is a member of the crocus family. Plant saffron corms in full sun in well-drained raised bed rich in organic material. Space the corms 5-10 cm apart and plant 15 cm deep for maximum spice yield or 8 cm deep for balanced spice and daughter corm production.
Water well when the first leaves appear in autumn. Pick flowers daily, preferably first thing in the morning before they open then remove and gently dry the red stigma. Saffron flowers during April and May.
