This wooden food press is perfect for making Feta and Halloumi cheese as well as pressing tofu, tempeh and nut cheeses.
It holds curds from 4-5 liters of cows milk to give a yield of 600 -700 grams of cheese.
The design of this press came about after trying and failing to find presses that would stand up to regular use.
Expensive plastic frames broke and melted in the wash. So a strong and water-resistant wood was the answer. After searching for a sustainable timber we chose bamboo.
We wanted something that would last, and we're still using one of the first prototypes of this frame eight years later.
These presses are made to be lined with cheesecloth, filled with curds and pressed with a pot of water or other improvised weights on the top. Sit on a rack so the liquid drains away.
The frame makes thick squares of cheese or tofu which can be cut into chunks, brined and stored.
