Agree with note below about rennet/culture, fortunately had read Richards comment before I started. Product arrived very quickly. I have the Brie Camembert kit, maybe a few more instructions re time taken to get cheese to flipping time ( mines due for a turn in middle of the night) and 36 hrs is up at 1.30 in am!!! Like are times critical. Hope these comments helpful I am enjoying the process and hope it is a success, its looking good at the moment.
Given that I am new to making cheese (especially white mold cheese) I have little feedback other than my cheese appears to be progressing as it should. After being in the cheese box for 5 days they have developed a very nice start of white mold! I think I’ll have a hard time waiting for them to mature. The only thing that I would like to point out as a possible problem (I noticed early enough that it wasn’t for me) is that the packets of rennet and the packets of culture are identical and this could be a problem for someone who is unfamiliar with exactly what the contents look like if they were to remove them from the outer packaging and have them on the counter like I did.
Ordered my cultures on January 30. Today is February 21, still have not revived them.
