This stainless steel artisan cheese hoop is perfect for making delicate, semi-soft lactic cheeses such as Camembert, washed rinds, chevre, and even blue cheeses.
Not all curds want to be slopped into a heavily perforated basket or pressed under great weights. Some cheeses need the hand of the cheesemaker to flip and tend them while they drain. Rapid draining can result in hard cheeses that haven't had time to develop the right acidity during draining over a longer period. This lightly perforated, open-ended hoop comes with two flipping boards and uses the weight of the curd and gravity to drain slowly and evenly, creating cheeses with a succulent moist paste.
The dimensions are modeled on a traditional French Camembert hoop and will make a 260g (10oz) Camembert. Two of these hoops are included in our "Make Your Own Camembert & Brie" module together with our recipe book "How to Make Camembert & Brie".
